Cuquillo olives grown in the Sierra del Segura.
It is within the group of black olives, although its color is rather purple. Not very large caliber compared to other varieties but is compensated by its excellent sparkling flavor.
In its preparation we use a perfect balance of components to achieve a maturity and unmistakable flavor, similar to a spice, thyme. It is an indispensable companion in elaborate salads and select dishes. Without a doubt a product of a lifetime.
