Flavor: The slightly bitter and salty intensity of the gordal is enveloped in the unmistakable aroma of fresh cilantro, with the citrusy, sparkling touch of lime and the fruity background of EVOO. A fresh profile, almost "ceviche-like," that surprises without losing its Mediterranean soul.

Texture: Firm and fleshy pulp, with a firm and juicy bite; the onion in the dressing provides a crunchy counterpoint.
